What works best with...

Seafood Dishes

Seafood Dishes?

Roasts?

  • Serret Cabernet Sauvignon 2004 - Blackcurrant and forest fruits flavours edged with a hint of savoury green pepper. A medium-bodied, long lasting mouthful that's especially recommended with hearty stews.
  • Chateau Verbois Merlot Cabernet Sauvignon 2002 -intense cassis and fresh herb flavours courtesy of old vine Cabernet and Merlot. And it's really delicious! Definitely one to snap up while stocks remain.
  • Finca Olcadia Merlot 2004 - Plump and juicy with dark, berry fruit flavours and velvety tannins. The generous 14% alcohol is well balanced by the richness of the fruit.
  • Domaine Touzot 2004 - Barrel-fermentation in new oak barrels has added a layer of rich, creamy vanilla to the powerful, apricot fruit, beautifully balanced by a tang of citrus freshness.

Vegetarian Dishes?

  • Albastrele Pinot Grigio 2006 - Rich green-gold with floral apple and pear aromas. Intense citrus and stone fruit flavours make for truly mouthwatering enjoyment.
  • Domaine Chapitre 2003 - Rich, well-balanced and darkly fruity, the Syrah adds the deep cassis flavours and intense colours whilst the Grenache adds the big brambly, velvety textures.
  • <
  • Réserve de Gassac 2003 - Almost uneconomical yields and a cool microclimate have helped concentrate the glinting gold colour and intense flavours - opulent tangerine, pear and peach. And with its honeysuckle and apricot perfumes, this rich new vintage is dinner party quality.
  • Cour des Consuls Negrette Rosé 2005 - Fabulously rich colour with fresh strawberries and cream perfume and a really juicy, red berry palate finishing refreshing and pure.

pasta

Pasta and Pizza?

  • Farnese Merlot 2004 - This beautifully soft, plum-and-chocolate Merlot is wonderfully succulent thanks to gentle ageing in French barrels. Rich damson and forest fruit aromas and ripe blackberry flavours. Delicious with pasta, pizza and roasts.
  • Los Rosales Sauvignon Blanc 2005 - Intensely fresh with crisp flavours of grapefruit, green apples and tropical fruit. Wonderful as an aperitif and when paired with crab, grilled trout or mild Asian cuisine.
  • Altogrado Garnacha 2004 - Take a huge, juicy mouthful and savour the ripe, brambly fruit, satin-smooth texture and luscious oak. Deep cherry red colour, ripe Garnacha flavour - warm and peppery. Nicely balanced with good weight, structure and a powerful, fruit-driven finish. Enjoy with barbecues, pizza or roast pork.
  • McLeans Farm Barossa Chardonnay 2005 - Succulent, golden Barossa Chardonnay packed with tropical fruit and imbued with subtle layers of sweet vanilla. An elegant, refined masterpiece.
  • Sinclair Estate Oak Matured Merlot 2004 - Gorgeous ripe plum and liquorice flavours - the perfect partner for Welsh lamb or mature farmhouse cheddar. Enjoy with meat-based pasta dishes too.

  • Von Buhl Riesling QBA 2005 - The vintage (very sunny with a short, early harvest) was, according to one local expert perfect! One of the best in the last 50 years.
  • Ramirez de Velazco Bonarda Shiraz 2005 - Vibrant, deeply flavoured wine with mouthfuls of raspberry, black cherry and spiced plum.
  • L'Escarelle Sauvignon Blanc 2003 - Pale colour with yellow, green hues. Aromas of tropical fruits and melon with a citrus-fruit palate and clean finish. Serve slightly chilled, this is perfect as an aperitif or with salads and grilled fish.
  • Tololo Elqui Syrah 2005 - Seductive aromas of bramble, liquorice and white pepper lead to a deep, dark berry fruit flavour. Full bodied and intense thanks to unique, high altitude fruit. Deliciously moreish.

Chocolate

Chocolate and desserts?

  • Estancia de Carodilla Malbec 2005 - Smoky, wild blackberry flavours and a luxurious richness.
  • Ramirez de Velazco Bonarda Shiraz 2005 - Vibrant, deeply flavoured wine with mouthfuls of raspberry, black cherry and spiced plum.
  • Il Taglio NV - Made from the same Muscat grape as the region's sparkling wines and bottled young to preserve its exceptional freshness, it's an amazing taste sensation: Aromas of fresh grapes, honey and citrus fruits. Crisp, zesty and very slightly off-dry. A wine that demands a second glass.
