Ingredients:
- 4 slices Warburtons Hot Cross Bun Loaf
- 25g (1oz) butter, softened
- 1 large mango, peeled, pitted and sliced
- 50g (2oz) raspberries
- Vanilla ice cream, to serve
Sauce:
- 2 tbsp golden syrup
- 50g (2oz) soft brown sugar
- 40g (1 1/2oz) butter
Method:
- Preheat the grill. Toast the slices of bun loaf on one side only. Spread the untoasted sides with butter, and then grill until light golden brown.
- Make the butterscotch sauce by putting the syrup, sugar and butter into a saucepan with 2 tbsp water. Heat gently, stirring until the ingredients are mixed and smooth, and the sugar has dissolved. Avoid boiling the sauce.
- Arrange the toasted bun loaf on 4 plates and top with the fruit. Serve with scoops of vanilla ice cream and drizzle with the butterscotch sauce.
- Cook's Tip: Use sliced bananas and seedless grapes for a change.
