Comfort food - apple crumble with real custard

Hayley Edwards, of The Roving Chef, demonstrates how to create a delicious apple crumble with real custard. Perfect for a tasty treat on a cold autumn/winter night. Print out the recipe below.

Recipe

4 people
Ingredients
450g Apples -preferably Bramley but equally Cox's would be great
125g caster sugar
4 tablespoons of water

Topping
75g plain flour
50g Demerara sugar
50g ground almonds (optional)
50g butter chilled cut into cubes

Real custard
275 ml/1 pint cream
1 vanilla pod
3 eggs yolks
1 tsp cornflour
25g caster sugar

Method
1. Preheat the oven to 180C.
2. Roughly chop the apples and put in a pan with the sugar and water.
3. Simmer gently over a low heat until the apples becomes soft - remove from the heat and leave to one side.
4. In a separate bowl mix the flour and butter together so it resembles breadcrumbs, add in the sugar, and almonds.
5. Put the apple mixture into an oven proof dish and cover with the topping.
6. Place this in the oven and cook for roughly 30 mins - you just want the topping to be golden.
7. Let the crumble cool and serve with fresh cream or custard.

For the custard
1. Heat the cream with the vanilla pod until just boiling.
2. Blend the egg yolks, sugar and cornflour together.
3. Pour over the cream and stir well.
4. Return the mixture back into the pan and, stirring constantly until the custard thickens.
