Ingredients
2 cups of coconut milk
1 pound of stewing beef, cut into bite-sized pieces
1 clove of garlic, finely chopped
1/4 teaspoon of coriander powder
1/8 teaspoon of pepper
1/4 teaspoon of salt
1 stalk of lemon grass, finely chopped
or
1 tablespoon of dried lemon grass, soaked
3 tablespoons of fish sauce
1/2 teaspoon lemon rind, finely chopped
2 tablespoons of chunky peanut butter
1 tablespoon of sugar
1/2 teaspoon of crushed red pepper flakes
1 scallion, minced
Method
Bring the coconut milk to the boil over high heat in a large saucepan (stirring occasionally). Reduce the heat to low and let it simmer uncovered for 15 minutes (again, stirring occasionally.) Add the remaining ingredients and stir the whole mixture. Cover the mix now and simmer over medium heat (stirring occasionally) for 1 and a half hours or until beef is tender. Serve hot over rice.
