Ingredients
500g frozen spinach, defrosted and excess water squeezed out
125g fresh white breadcrumbs
1 small onion, finely chopped
2 cloves of garlic, crushed
2cm piece of ginger, grated
2 teaspoons garam masala
50g sultanas
sea salt
2 tablespoons sunflower oil for frying
For the sauce
200ml natural yoghurt
1/2 teaspoon sea salt
1/4 teaspoon cayenne pepper
5cm piece of cucumber, peeled and grated
3 tablespoons finely chopped mint
Method
1. First of all, to make the yoghurt sauce, simply mix all of the ingredients together and keep cool.
2. Place the spinach, breadcrumbs, onion, garlic, ginger, garam masala, sultanas and a good pinch of salt in a food processor and blitz to give you a soft-ish paste. Wet your hands and roll the mixture into walnut-sized balls.
3. Heat the sunflower oil in a frying pan and gently fry the dumplings for 7-8 minutes until they are evenly golden.
4. Serve the dumplings warm with the Minty Yoghurt dressing.
