4 eggs
1 large tomato
1 small onion
Garam masala
Turmeric
Chilli powder
Vegetable oil

Method
Dice the onions. Cut the tomatoes into small pieces. Beat the eggs in a bowl.
Pour two-and-a-half tablespoons of cooking oil into a saucepan and heat over a medium to high gas or electric hob. When the oil is really hot add the onions and fry until they begin to turn golden brown. The trick is to brown them quickly so that they do not lose their succulence.
Add half a teaspoon of turmeric, a quarter teaspoon of chilli powder, a quarter teaspoon of garam masala, diced tomatoes and salt to taste. Take the pan off the cooker and add the beaten eggs.
Put the pan back on the cooker and stir continuously until the eggs are cooked. Eat with toasted bread (wholemeal is best).
