2 cups cubed, boneless raw chicken pieces
1 tbsp vinegar
1 tsp coriander
1 tsp cumin
½ tsp turmeric
½ tsp salt
½ cup cold water
2 tbsp vegetable oil
2 large onions
1 lemon
½ tsp brown sugar
3 green chillies
2 (or more!) dry red cayenne peppers
2 garlic cloves
2 tbsp chopped fresh coriander
½ teaspoon salt
Method
Grind the green chillies, red peppers, garlic, coriander leaves and salt into a paste in the blender. Slice the onions. Squeeze the lemon and set the juice aside.
Put the chicken into a saucepan and add the cold water, ¼ teaspoon of coriander, ¼ teaspoon of cumin, vinegar and salt. Simmer over a low heat until dry.
Heat a tablespoon of oil and brown the onions, then set aside.
Heat the remaining oil and fry the ground paste for a few minutes then add the remaining coriander, cumin, turmeric, sugar and lemon juice. Stir for two minutes. Add the onions, chicken and more salt if necessary. Stir until dry. Serve.
