1½lb potatoes
1½oz butter or cooking oil
1½ tsp turmeric
1 tbsp coriander
1 large bay leaf
Salt
½ tsp chilli powder
¾ tbsp garam masala
Method
Peel, wash, dry and quarter the potatoes. Heat the butter. Add the turmeric and bay leaf, fry for a few seconds, then add the potatoes. Add a cup of water and boil until dry. Fry over a medium heat for about five minutes, stirring continuously.
Season with salt and chilli powder and add ground coriander and garam masala. Fry for two more minutes, until the edges of the potatoes are crusty.
