Peasants' Potatoes


Ingredients:

  • 2kg potatoes
  • 1 onion
  • 200ml milk
  • 200ml stock
  • butter

Method:
  1. Peel and slice potatoes into thinnish slices. Cut the onion in half and slice finely.
  2. Butter the bottom and sides of your baking tray or dish and place a layer of potatoes over the bottom. Place a layer of onion over the top and sprinkle with salt and pepper.
  3. Repeat this process including a bit of salt and pepper on each layer until you've used up all the potato and onion.
  4. Pour over the stock and milk, place a few knobs of butter on top and put in the oven for around 45 minutes.
  5. Cook's tip: for extra flavour place 2-3 bay leaves on the first layer of potatoes OR grate a bit of nutmeg on the first 2 layers of potato
  6. Serve with roast lamb and seasonal veg.
