Fruity Butterscotch Indulgence

Ingredients:

  • 4 slices Warburtons Hot Cross Bun Loaf
  • 25g (1oz) butter, softened
  • 1 large mango, peeled, pitted and sliced
  • 50g (2oz) raspberries
  • Vanilla ice cream, to serve

Sauce:

  • 2 tbsp golden syrup
  • 50g (2oz) soft brown sugar
  • 40g (1 1/2oz) butter

Method:
  1. Preheat the grill. Toast the slices of bun loaf on one side only. Spread the untoasted sides with butter, and then grill until light golden brown.
  2. Make the butterscotch sauce by putting the syrup, sugar and butter into a saucepan with 2 tbsp water. Heat gently, stirring until the ingredients are mixed and smooth, and the sugar has dissolved. Avoid boiling the sauce.
  3. Arrange the toasted bun loaf on 4 plates and top with the fruit. Serve with scoops of vanilla ice cream and drizzle with the butterscotch sauce.
  4. Cook's Tip: Use sliced bananas and seedless grapes for a change.
