Ingredients:
- 2 tsp butter
- 4 slices Warburtons Hot Cross Bun Loaf
- 2 large eggs, separated
- 200ml (7fl oz) milk
- 1 tsp vanilla extract
- 50g (2oz) caster sugar
- 400g can red cherry fruit filling
Method:
- Pre-heat oven to 180°C/fan oven 160°C/Gas Mark 4. Grease 4 individual baking dishes with the butter, or use one large dish.
- Tear up 1 slice of Hot Cross Bun Loaf into each dish. Beat together the egg yolks, milk, vanilla extract and half the sugar. Share between the dishes and allow to soak for 5 minutes. Transfer to the oven and bake for 12-15 minutes, until set.
- Remove the pudding dishes from the oven and share the cherry fruit filling between them.
- Whisk the egg whites in a grease-free bowl until they hold their shape. Add the remaining sugar and whisk again until stiff and glossy. Pile onto the fruit, then return to the oven and bake for 4-5 minutes until golden brown. Serve at once.
- Cook's Tip: It's easy to make this recipe for two - simply halve the quantities.
