Ingredients:
- 3tbsp caster sugar
- 50g (2oz) pecan nuts
- 25g (1oz) butter
- 2 tbsp balsamic vinegar
- 2 tbsp maple syrup
- 2 ripe red skinned pears, cut into 1/8ths
- 4 handfuls mixed salad leaves, washed
- 1x 150g pack Country Life Stilton, crumbled
Method:
- Line a baking tray with baking parchment. Melt the sugar in a small dry frying pan over a high heat, stirring until dissolved and syrupy. (The sugar must dissolve before the syrup boils). Bring the syrup to the boil and stop stirring. Allow the mixture to boil until a rich golden brown caramel forms. Add the pecan nuts and stir until coated. Tip the nuts and caramel onto the lined baking sheet. Allow to cool and set.
- Meanwhile, melt the butter in a large frying pan. Add the vinegar and maple syrup. Add the pears and cook over a gentle heat for 5 mins or until tender.
- Divide the salad between 4 serving bowls. Top with the pears. Coarsely chop the caramelised pecans and scatter over the salad with the stilton. Drizzle with the sauce from the frying pan.
