Bread sauce recipe
Serves 4
Ingredients:
1 large onion
6 cloves
500ml full-fat milk
1 bay leaf
10 peppercorns
100g white bread crumbs
50g butter
4 tbsp double cream
good grating of nutmeg
Method:
Cut the onion in half and stick 3 cloves in each piece. Put the pieces into a saucepan with the milk, bay leaf, a good pinch of salt and the peppercorns. Bring the milk to the boil, then take the pan of the heat and leave the mixture to infuse for 30 minutes. Strain and bring up to the boil again. Pour the milk on to the breadcrumbs and add the butter and cream. Return the sauce to the pan and slowly reheat it, without boiling. The mixture will thicken as it heats. Add a really good grating of fresh nutmeg and check the seasoning. If the sauce is too thick, add a little more milk.
Cranberry sauce recipe
Ingredients:400g Cranberries, fresh
100ml Port, reduced by half
150g Sugar, caster
50ml Water
5g Orange, zest
Method:
In a medium saucepan, on a medium heat, bring the ingredients to the boil, reduce the heat and simmer for 15 minutes Allow to cool. keep in the fridge in a sterilised jar.
